Southern Fruit Cobbler (Rossi Anastopoulo, USA)
During my time interning at the Bread House in Gabrovo, Bulgaria during the summer of 2014, I was asked to host an “American Dinner” for the community. As I am from the South, it included fried chicken, sweet tea, and a summer classic, cobbler. I made mine with fresh plums bought at the market that morning, and it was a huge hit, with many people asking me for the recipe.
This recipe is ridiculously simple. All it takes is equal parts flour, sugar, and melted butter combined to form a soft dough, and you can make as much or as little as you want. You can use whichever fruit you wish, whether it be berries, peaches, plums, apples, etc. If the fruit is sweet, leave it be, but if it is a bit tart, just sprinkle some sugar on top before adding the dough.
Southern Fruit Cobbler Recipe
1 1/2 cups all purpose flour
1 1/2 cups sugar
Approx. 1 1/2 cups melted butter
Enough fruit to make at least a 2 inch layer in your baking dish
Directions: Preheat oven to 350F / 180C. In a large bowl, combine the flour and sugar, then add the butter and stir until a soft dough is formed. Place your fruit in a baking dish (if it is soft and sweet, leave it be, but if it is somewhat tart, sprinkle some sugar on top).
Form the dough into disks about the size of your palm that are 1/4-1/2 inch thick. Lay on top of the fruit until it is mostly covered or you have used up all the dough. Bake for 45-55 minutes, until the topping is lightly browned and the fruit is bubbling and juicy.
